Default beginner here...which bike to start on?

hey my name is brad im 19. i have been interested in bikes for about 6 months now and im looking to buy now. i got helment , gloves ect. just need a bike. i have never had any riding experience before. alot of people say hardest part is "getting out for first" .....well i have drivin a 6 speed mustang cobra for 3 years now, so at least i have an idea of how that all works. my question is, is an older 600cc to much for me? and if it is, is it weight, max speed, handling, unforgiving bike? because i really like the look of u know honda cbr 600, suszki gsxr 600. alot of peps have told me to start out on a honda katana, or a 250cc or 400cc but again the problem is i dont really like the look of a smaller bike, let alone i cant even find any 400 or 250s in southern cal, they are so rare, everything for sale is 600cc and up. im really leaning toward an older 600cc like a honda f2, but others say thats just to much bike for me, but the thing is im a very safe drive. 95% of the time i drive my cobra like a mini-van, and when i rarely get on its on an open road where no one can pull out in front of me. no tickets, no crashes, im a very defensive driver. i just want to know if i get a 600cc will it be so heavy, and unforgiving that i cant even practice in an open parking lot? thanks alot guys, i would really aprreciate ur thoughts.--brad
