Default Removing Forks

I just picked up my 83 GS550E. The seals in the forks are shot and theres no pressure, so the nose dives so much when breaking it hits the bottom of the fairing coupling. I was told buy the business I bought it from, that if I can remove the forks and bring them in he'll do them for free (DEAL) I sort of just dove into the project and removed the wheel and fairing (which is easy enough). I started to unscrew the bolt on top of the fork and oil started to fizzle out so I stopped.

My question is, do I have to remove any of the light and instrument panel housing or anything else? And whats the proper way of removing forks.
