Back on topic, your safest bet really is to get off the road - pull over onto the shoulder.
Most people just larking around aren't going to bother to slow down to a complete stop and pull over. If they do, then they aren't messing around which is where you either take your chances back on the road on your bike, or protect yourself by some other means - it's a good idea to carry while you ride, especially if you ride alone. My wife has one of those North American Arms .22s. They take a .22 magnum round which will definitely ruin a bad guy's day.

On a cruiser I wouldn't fancy my chances outrunning any car. My truck would run my bike down above 100 mph - and really wouldn't be that far behind in a straight line race from a standstill (0-60 in 6 seconds and 1/4 mile in 14.5)

its good to have a crotchrocket in those type circumstances.. thats all I am gonna say about that..

(being able to go 186 mph also helps.. )

I agree and it's a good idea to practice making a quick exit into a driveway of a parking lot for just this reason. Something that no training course I've ever heard of even mentions.

Only had that happen to me once in 30+ years. Two young asshats in a rat-truck. Thankfully the 2-lane road was pretty much empty at the time. A quick sprint to 100 mph for about a mile and I thought it was over. Not so.
Took them about 5 miles to catch up. Left them in the dust again and pulled off. Had my cell phone ready when they went past.

Couldn't handle it that way now as current bike won't go over 70.......so the best option now would be to scan ahead for a pull-off and slow down enough to get off with little or no braking. Done right, they won't be able to match the maneuver.

Yes, but not only the bike is important. The rider needs to be able to handle that kind of speed. A newbie may be able to twist their wrist and the bike will take them to Mach 1, but they probably won't survive the experience. At 125+ mph, traffic comes at you pretty damn fast. One second you see a speck on the horizon, and before you really take notice of it, you've already passed it. That can be damn frightening.

now that i think of it.. my first response would probably be drop a gear or two and just leave them in my wake if i only had long stretch of road ahead of me. If on the interstate i'd pull off and let them go on their inbreeding ways (in no way was this a reference to the south or other states, countries or religions in which this is practiced)
