This thread and checking the smoking meats forum has really made me wish I didnt have let my dad take my grill/smoker to the barn at home when I moved into my new apartment!!

I'm going to attempt something like this on a regular gas grill friday. Any ideas or suggestions I can try to make this turn out better. (Notice I said better b/c how bad can bacon, sausage, mushrooms, rice and maybe some cheese be???)

I was actually gonna try a grilled/smoked parmasean I saw at SMF.

But I was more refering to cooking techniques for a regular grill. Or just roll it and throw it on the grates and go?

Planning to do my first fattie Friday after work. Gas grill with indirect heat. Maybe get one under my belt before the 4th, even tho my friends will probably be drunk and will eat anything.

Sausage, bacon weave, shredded cheese blend (or maybe smoked guoda), mushrooms, onions, scallions, and brown rice.

I'm glad you started this, Ive been a hawk on SMF the last day or so. Lots of ideas, maybe a great new hobbie when not riding.

Go with the Smoked Gouda.

I had it in my hand, and then put it back. My instincts told me to grab it, and I don't know why I didn't buy it.

I had a neighbor waiting for me on the corner last night. He wants to "challenge" me to a "rib cook-off" on the Fourth.

I laugh at this. The last guy that "challenged" me to a cook off. Cooked his Boston Butt in the oven. Shredded it. And then then unsuccessfully tried to teach the shredded meat how to swim in some artificial smoke flavor infused BBQ sauce. Vile sh*t for a true BBQ fan, but haute cuisine for most of you Northerners.

True pulled pork/ bbq is a hog cooked for hours, outside, then chopped with a lil vinegar and red pepper added. Thank you eastern NC!

Yeah good stuff in the fattie section, calzone fattie, greek, chicken parm

Since I've been on a bit of a hiatus, I neglected to mention that my father's team took 2nd place in shoulder this year. It was unbelievable. I got one (full shoulder) from the winning 'batch'....
