Joe's Frickin Braised Chicken

You'll need
A few pounds of chicken. Legs, thighs, drumsticks, breast, whatever you want. I wouldnt recommend wings though since they dont have a lot of meat on em.
1 cup of flour
1 tbsp salt
1 tbsp black pepper
1 tbsp paprika
1 red or green pepper, sliced
1 onion, chopped
1 can of mushrooms, one of the little cans. You won't need much.
about half a clove of garlic, peeled and chopped
about 2 or 3 shots of white wine. Get the little airline bottles, half of one works well.
a little vegetable oil
some lemon juice

If you havent already, cut up the veggies and stick them in a largeish baking dish. I use a nice pyrex one thats about 12x6 inches or thereabouts. Add the white wine and about 3 capfuls of lemon juice - possibly 1 oz but who's counting.
Mix the flour, salt, pepper and paprika in a dish large enough to accomodate the chicken parts. Dredge the chicken in the mix so it's evenly covered. Make sure the chicken is covered welland any flaps of leftover skin get addressed. When you're browning it later, this will come in handy. No one likes a sloppy chicken.
First, we're gonna pan fry these suckers. In a frying pan heat just enough oil to cover the bottom to medium high heat. Brown the chicken on all sides. The goal here is not to cook the chicken all the way through, but just to make the outside nice and golden. When the bird is just right, pick them out and stick them in the baking dish on top of the veggies. It's alright to let the chicken parts touch each other so no worries there. Try to drain off the oil from the chicken, otherwise it'll be greasy.
Heat up your oven to 375º. Cover the chicken and vegetables with aluminum foil and bake for 45 minutes. Drink the rest of the white wine. Then, increase heat to 425º and remove the foil for fifteen minutes.

Serve with the cooked veggies. The peppers come out fricking incredible in the lemon wine sauce that you end up with.
