Red face Wheel removal tips?

I'm in the process of doing a polish job on the bike right now.. plastics are off, and my stands are in the mail, on the way. Once I get the bike up, I'm going to be removing the front wheel to get to the insides of the forks, and the rear wheel to get to the inside of the swingarm and the sprocket. The front wheel seems to be no problem to remove.. a few instructions from the owner's manual and I'm good to go..

.. but the rear wheel makes me uneasy. I have the instructions, but are there any tips or no-nos to make me aware of, to ensure a successful removal, and especially a successful and safe reinstallation? I've never taken it off, and certainly never taken the chain off.

The cotter pin in the axle.. do I need to replace that every time I remove it? Or just inspect it before I put it back on?
