Default What exactly does the choke do?

My 1981 GS450-S is my first bike, and it's my first carbureted vehicle. I understand basically that a choke is necessary to limit how much air goes into the carburetors while it's cold, but I don't understand why this is necessary. Anyone have a good detailed explanation?

it restricts the air going to the cylinders. In doing so, the vacuum moves further down the venturi(narow section of the carb) which causes a low pressuer area and makes the "choke circuit" feed more fuel to the cylinders. A ritcher fuel mixture ignights more easly and the choke circuit also incorperates an idle increase at the same time vis a mechanical stepped cam that contacts a second idle screw.
