Default FI & PCIII question

I understand the purpose of an FI or PCIII, to adjust the mixture of air and fuel running through the bike, so that it is running at its optimal performance. My question is this: Couldn't you just take the bike to a shop and have them adjust it for you? My understanding is its a permanent adjustment and as long as your not constantly doing mods and changing parts it shouldn't have to constantly be adjusted. Isn't that part of the reason you have a bike dyno'd? Thanks for helping to clear up my confusion.
