A part of this is my lack of experience, i've been riding on these kind of bikes onlya few years now and cant really say i had the chance to try out bikes with different handlebars.
What i could say is that last year i had Kawasaki Vulcan 900 Custom with a drag bar that felt way heavier than my current 1100 Vstar, so as much as i love the look of the drag bar i wouldnt put it on my bike.

How about ape bars???
I never had the chance to ride a bike with an ape bar.
Is it more comfy than a wide surf bar???

Comments from experienced riders would be highly appreciated, and will def get me closer to the right choise for my beloved Vstar.
