Default Chain Trouble GS1000

Hey all, I need some advice, brain power, and expertise ASAP
I have a 79 GS1000 that I bought and brought back to life this summer...now she is having a big problem.
I let my drive chain get too lose after a long road trip about 2 weeks ago and I just jumped the chain doing about 85mph...fun fun fun

Thing is except for smashing the guard and damaging the font cover, It doesn't LOOK like I did much damage....BUT after putting the chain back I have a major issue... she stalls at the drop of a hat and dies on even the slightest incline.

Starts up no problem with choke
but will either sit at 1k rpm and then die in a few seconds
or will rev right up to 4k-4.5k for no apparent reason and crack and snap in the pipe something fierce.

When she warms up she will idle ok for a little bit and then suddenly die like someone cut the gas... sometimes I can hold a light rev... sometimes it is like I never touched the throttle and hit the kill switch instead.

She shifts in idle smoothly through all the gears

She seems to shift ok while moving (at least in 1st and 2nd but if I hit any type of incline at all (or sometimes no incline or even down hill) she dies... again throttle play doesn't even sputter and slow the stall.

Carbs were cleaned and syncd in June (2k ago) and new points were installed then also. All rubber was replaced (except the carb boots which seem to be the holy grail to find)

If you have any thoughts or clues for me that would rock... She is my daily runner (60-100 miles a day) AND I am moving to TX from WA in about 2 weeks and really want to ride her down.... if I can't get this figured out I will have to fly and sell her.... and that would be a waste
