I think you're screwed there.
In Alberta you have 2 weeks to switch over the registration, but you need valid insurance day 1. If I remember from having lived in Manitoba, you will still get raped by the BC government when you register in BC and being nailed for the PST at that time. You may want to check with your provider.

Hey Guys, That C109RT is an awesome bike. Does anyone know what kind of mileage you can get with that 240mm?????? Hopefully 13ish - 15ish k?????? Specifically,,,,,tire wear??

Well, managed to put together a video from our 1100 pictures from last week. 2900 km in a week - great riding weather through the mountains.
Check out the fuel prices.
Over $6 a gallon

It's a little long at 11 minutes, but shows alot of the scenery we experienced over the week.
