Most driving instructors will tell you to learn to ride your street machine on dirt - you never know when you might hit dirty pavement, or when you may have to leave the paved surface to avoid an accident or hazard. Just look at what happened in LA recently ... some streets have had serous mudslides, and the road surface is covered in dirt. You should know how your machine reacts on soft surfaces, and how to keep it flying straight and level.
In one of my safety courses, we went onto a dirt path and practiced doing emergency stops with the rear wheel - it's kinda fun to have the bike fishtailing and realise that you still have is under control - like my instructor said "just relax and look straight ahead - your a$$ knows what to do to keep the bike straight"
