The advantage to the dual disks is for better modulation and less fade after repeated hard braking. In a panic situation, it is usually easier to keep the dual set up from locking up and on the edge of threshold breaking.

So, for a chopper that would rarely be ridden for more than a few minutes at a time, then I guess, no. One would be ok. (In my opinion.)
