Post Keeping it slow

This is probably a foolish question but I'm going to ask it anyway. Have never ridden and hope to be taking the Motorcycle Safety course over in Savannah in the spring. Have always ridden snowmobiles, jetski's, etc. My main concern: on these "toys" I'm always pushing it. Running faster, jumping higher, dumping the machines, racing...basically running over limit. I'm a bit older now, in my mid-30's and recently married, so I'm hoping these old habits are dead or dying.
I'd think there are other's out here that have/had the same mentality..what's the best way to beat it or suppress it? The concern is subconsciously, after getting comfortable riding, the old habits may return. I'm really looking forward to learn how to ride and just don't want to be a statistic. Thanks for any thoughts.
