After many weeks of debate, cataloge searches, product searches and fourm searches I finally lucked into a product called ElectroPods Complete Motorcycle Accent Lighting Kit. I found them at my local Honda dealership.
Originally I was just going to do my wifes 2007 VT750C2 that is painted red with maroon flames. As I got to thinking about it I though, I figured I would do mine too (her install was the test bed for my install). My only regret was not taking pics along the way but I figured ya'll could PM me if you needed help.
Here is the pics of mine and how it turned out. The Kit was 6 each-6 LED pod arrays and 2 5 LED strips, compete wiring, test lite contraption and complete instructions etc. Mine are blue and the hardware is chrome. Lisa's was Red LED's and black hardware.

Here is the VT750CR
As in all the threads I have read so far, it's important to "mock up" the placement of the arrays. I used electrical tape folded over to simulate 2 way tape to stick them in place during mock up.The kit provides 2 way cushy tape. After the mock up I needed (cause I am OCD) to remove the seat (have to anyway to get to the battery) and I ended up removing my tank mostly so I can run the wiring from the LED's along with the harness wiring with wire ties. There is no need to tap INTO the harness, this kit run right off the battery. All the red POS wires are all tied together into the POS side of the provided switch (inbound to the switch) and same for the NEG black ones. The RED switch wire has a 1 amp inline fuse to the + of the battery and black goes to -, simple stuff and the switch can be mounted where you want it to turn the LED's on.
* HINT- go to Radio SHack and get a pack of 1 amp fuses cause you will probably need them.
I had one issues with my set up. I'll get to that in a sec.
So, I have 1 6LED pod each under the front and back of the tank on each side shining down onto the chrome rocker covers (4 total), 1 6 LED POD under the air box shining down onto the chrome case cover and one under the box on the left side (2 total) and one 5 LED strip mounted to the swing arm via wire ties and 2 way tape on the right side, back lighting the pipes and back wheel.
* ISSUE (I mounted 1 5 LED strip to the chassis crossbar under the bike shining on the ground but this strip was damaged or something because with both 5 LED stips on together they blew the fuse, one or the other would work but not both together, THIS WAS NOT A PROBLEM WITH Shadow Spirit I WIRED THE DAY BEFORE, SO IT WAS A SNAFU)
I used heat shrink tubing when I needed to add wire length (got the wire from shortening the other arrays wires) and I cut all the wires to exact lenghts under the seat, twisted all the arrays red and black wires together (after I made sure it all worked, I soldered all the wires together) then twisted it all up and used the wire nuts provided in the kit to button it all up.
* there are 3 hard rubber cusions mounted to teh seat bottom of a stock C-50, make sure the wires are out of the way of these cusions or it could crush the wiring, it takes trial and error. You know u have it right by how the seat goes back on and how the bolt holes line up. Any resistance and you have wires in the way more than likey.
This kit cost $89 and really is all you need to get started. ElectroPods makes 2-6pod LED kits to add on as well as rope lites and 5 LED strips too.
I hope this helps for those wanting to wire up LED's themselves.
