Adding a second disk is an issue as the wheel isn't designed for it, so major expense in sorting that out. Six piston calipers and larger rotors are my pick for a substantial improvement, and are common on Harleys and Buells. All you would need would be the adaptor machined from suitable stock, quite a common practice for race bikes so easy enough to do.
