I think that the primary difference is the old "V-2" versus "I-4" discussion. The V-Strom is a V-twin, which gives you more torque and more vibration. The Bandit is an inline 4, which is smoother and quieter, but also heavier. You really need to ride both and see which appeals more to you. I prefer 3- or 4-cylinder engines ... the V-twin never did it for me.
