Sounds AWESOME. You're both going to absolutely love it. The walk from MGM to Paris is a little over a mile, and with current weather, should be quite comfortable. My wife and I went in July and I made the mistake of walking from Bellagio to Stratosphere. 3 miles doesn't seem that bad until you try it in 110º heat.
By the way, the Stratosphere observation deck at night is one of the most amazing sights you'll ever see. The line is very long though.
Take a jacket. The meal will take a while and temperature drops about 30º after sundown. Of course you could just snuggle up and...keep warm, ahem.
When the guys on the street try to hand you a card, just keep walking.
