Riding from New York to California, in a week, is dooable, but you will have to be on the freeways most of the time, and I can tell you from experience, that you won't remember a lot of it. It all just sort of runs together when you do it that fast. When you are doing back to back days, anything over about 400 miles a day, and it starts to blur on you.
Single days of 1,000 miles, with a week to rest after, are no problem. I remember 90 percent of the trip, but when I start doing back, to back, to back, 600 mile days, it just all seems to run together.
FYI, Riding in Canada, across the top of the Great Lakes is a great trip. Drop back into the States, in Minnesota, then west through the Black Hills.
