The Intruder is a very narrow bike, so I like to highlight that. To me, things like crash bars belong on fat bikes like the Volusia. For more leg room, I added some MC Enterprises highway pegs.
I like to make an Intruder even more narrow. Drag bars look good, and I like to either remove the rubber mounts on the stock turn signals to make them narrower, or put on the smallest turn signals I can find. A side mount plate mount goes under the head of the lower shock bolt on the left side of the bike, which lets you loose that dirtbike-looking plate mount and light.
Removing the sissy bar changes the look of the bike a lot, making it more sporty. I removed mine and put on a stock S50 seat , and it looks like a whole new bike. I'll see if I have a picture somewhere...a Corbin Gunfighter seat looks cool too.
But my favorite mods for the Intruder improve the bike's performance- Progressive shocks in the back, Progressive fork springs in the front, and Metzeler or Dunlop tires front and rear. This improves the bike's handling and ride considerably.
As for your radiator cover, I believe the 700 and 750 use the same radiator, but the 800 radiator is bigger.
