You rack from fermentation when it is stll atctive , so as the S02 acts as a barrier between the wine surface. Readings of 1.006 less than 1.020 so it is not too active.
When you rack you leave some space for the final fermentation. Then you top off your wine, using a prior batch rather than diluting with water.
I still have some bottles here for you plus if you need a few to top off your batch, I have.
The first few times you rack you leave the sediment behind requiring topping off your rack. Air is not what you want sitting on top of the wine.
